Quick Fried Rice

Looking for a perfect dish to compliment your chinese dinner, then try this fried rice. 

  • 2 tbsp. chopped onion
  • 2 tbsp. butter or margarine
  • 2 cups quick rice
  • 1 2/3 cups water
  • 2 beef or chicken bouillion cubes
  • 1/2 tsp salt
  • dash pepper
  • 2 eggs, slightly beaten
  • 1/4 cup chopped green onion
  • 2 tsp. soy sauce

In a large skillet, saute the 2 tablespoons chopped onion in butter or margarine.  Add rice, water, bouillion cubes, salt and pepper.  Bring to a rolling boil, stir well.  Cover and cook over low heat till all water is absorbed.  Add eggs and chopped green onion to the rice and cook until eggs are set.  Stirring constantly.  Stir in soy sauce. Yield: 4 – 5 servings.

For more flavor, in a separate skillet, brown diced beef or chicken in 1 tbls butter or margarine. Add to other ingredients when you add the eggs and green onion.
