			<content:encoded><![CDATA[<p>Tofu is a bland food that can miraculously take on the flavor of its surrounding ingredients making it a highly versatile as well as highly nutritious! It is a protein-rich food that is made from the curds of soybean milk kind of similar to the way that cheese is made.  Soy protein can help to lower total cholesterol levels by as much as 30%, lower LDL (bad cholesterol) levels by as much as 35-40%, lower triglyceride levels, reduce the tendency of platelets to form blood clots, and possibly even raise levels of HDL (good cholesterol).  <span id="more-230"></span><img title="More..." height="10" alt="More..." src="http://www.giftwrapandmore.com/wp-includes/js/tinymce/themes/advanced/images/spacer.gif" width="870" name="mce_plugin_wordpress_more" /></p>
<p><font size="3"><font face="Times New Roman">1/2 C Low Salt Soy Sauce<br />
</font></font><font size="3"><font face="Times New Roman">3 T Liquid Smoke<br />
</font></font><font size="3"><font face="Times New Roman">1/8 C water or dry sherry<br />
</font></font><font size="3"><font face="Times New Roman">1 clove fresh garlic<br />
</font></font><font size="3"><font face="Times New Roman">1 T onion powder<br />
</font></font><font size="3"><font face="Times New Roman">1 t fructose<br />
</font></font><font face="Times New Roman" size="3">1 lb. extra firm tofu, sliced to 1/4&#8243; thick strips</font></p>
<p><font face="Times New Roman" size="3" /><font face="Times New Roman" size="3"><font face="Times New Roman" size="3">Slice tofu and express water between several layers of paper towels, remove as much water as possible so that it can absorb more of the marinade. Place on a screen rack to allow water to evaporate a little more. Mix all ingredients except tofu slices together in a bowl.  Place marinade in a high sided cookie sheet or in a cake pan, and place tofu slices into the marinade. Let them soak for several hours or overnight.  Place tofu strips onto a vegetable oil sprayed cookie sheet set oven to 200 degrees Use a spatula to flip it over once every hour until dried.  Note:  These are suppose to be a chewy jerky not a crispy jerky.</font></p>

<li>2 limes, juiced</li>
<li>Segments of 1 lime</li>
<li>1 tablespoon Dijon mustard</li>
<li>1 tablespoon brown sugar</li>
<li>1/4 cup grape seed oil <span id="more-148"></span></li>
<li>1/4 cup Thai basil leaves, whole</li>
<li>1/2 pound bean sprouts, hair removed</li>
<li>1 medium sized red bell pepper, julienned</li>
<li>1 medium sized carrot, peeled, julienned</li>
<li>1 small package smoked tofu or tempeh, julienned</li>
<li>1 package rice papers, 10 to 12 inches diameter, rehydrated</li>
<li>Salt and black pepper, to taste</li>
</ul>
<p>In a bowl whisk together juice, lime, mustard and sugar. Whisk in the oil and season. Toss with all the vegetables and tofu. Check for seasoning. Lay out 1 wrapper and place a small mound of mix near the bottom. Roll bottom towards the middle. Fold in both sides and continue rolling. Finish roll and let rest. Individually wrap each roll with plastic wrap. Will hold for 2 hours in the fridge. Remove wrap, slice on the bias and serve on top of extra salad.</p>
