This Easter why not make some Carrot Cookies for your friends and loved ones. You will need the following:

1/2 cup shortening

1/2 cup of melted butter

3/4 cup sugar

2 large eggs

1 1/4 cups cooked, mashed carrots

2 cups of all-purpose flour

2 teaspoons of baking powder

1/4 teaspoon of salt

1 cup of coconut flakes

1/2 cup chopped pecans

Instructions: Combine the first 3 ingredients and beat at medium speed; then add eggs and carrots making sure to mix well. Next combine the flour, baking powder and salt; mix well. Stir in the creamed mixture, coconut and pecans. Then drop by a teaspoon onto a greased cookie sheet and bake at 400 for 10 minute
This would be a great cookie to give out as a gift this Easter. You can wrap it up in cello and give it in a nice gift box or organza bag.

1 1/2 lbs Oreo cookies

1 8 oz pkg cream cheese

1 cup confectioner’s sugar

1/2 cup softened butter

3 1/2 cup milk

1 new plastic flower pot

1 small flower arrangement (made from icing or premade from store to resembling a new plant)

Crush the cookies very fine. This is the “dirt” for the “potted plant”. Cream together the cream cheese, sugar and butter. In another bowl, mix together the milk, pudding and whipped topping. Then combine the two mixes. Line a plastic flower pot with colored aluminum foil. In the pot, alternate layers of the crushed cookies and pudding beginning and ending with the crushed cookie “dirt”. Place small flower arrangement on top and refrigerate seveal hours or overnight before serving.

I received this recipe in an email and thought it would be perfect for the person in your life that is always playing tricks on everyone.

1 chocolate cake mix

1 white cake mix

2 large pkg vanilla instant pudding mix

1 large pkg vanilla sandwich cookies

green food coloring

12 small Tootsie Rolls®

1 new kitty litter pan

1 new plastic kitty litter pan liner

1 new pooper scooper

Prepare cake mixes and bake according to directions.
Prepare pudding mix and chill until ready to assemble.
Crumble white sandwich cookies. Remove 1/4 cup cookie crumbs, add a few drops green food coloring and mix until completely colored.
When cakes are cooled to room temperature, crumble into a large bowl. Toss with half the remaining white cookie crumbs and just enough of the chilled pudding to moisten mixture.
Place the plastic kitty litter liner in a new clean kitty litter box and fill with cake mixture.
Put two or three unwrapped Tootsie rolls in a microwave safe dish and heat until soft and pliable. Shape Tootsie Rolls to resemble cat poop. Repeat with all but four of the Tootsie rolls, and bury them in the mixture. Sprinkle the other half of cookie crumbs over top. Scatter the green cookie crumbs lightly on top of everything to give the look of kitty litter.
Heat 3 Tootsie Rolls in the microwave until almost melted and scrape them on top of the cake; sprinkle with cookie crumbs. Take one and heat until pliable, hang it over the side of the kitty litter box, sprinkling all four Tootsie Rolls with a few cookie crumbs.

For the surprise, invite everyone that would love to get back at the trickster to a party. Make sure that the trickster stays out of the room where the cake is till everyone has showed up for the party. Set the cake in the middle of the table. To make it look even more realistic, spread a few crumbles on the table around the kitty litter pan. Have the trickster close their eyes and have everyone positioned so that they may see the surprise on the face of the trickster. Hint: Have a camera handy, you will want to keep this moment forever.

Start heating up the oil for frying to about 375F. In a large bowl combine the milk, eggs, oil, sugar and salt. Mix it very well. Sprinkle in the baking powder, corn meal and flour. Stir it all up to make a slightly thick batter. Take your hot dogs and dry them off on paper towels. Dust the hot dogs with flour, coating them completely. The cornmeal batter won’t stick to the hot dogs unless they are coated in flour. Place Popsicle sticks into the flour coated hot dogs. Set the hot dogs aside. Coat the floured hot dogs with batter you have two choices. You can dip the hot dogs in the bowl of batter until they are coated, and then drop them into the hot oil. Only fry 2 or 3 at a time. Turn the corn dogs when the bottom side is well browned. Use tongs to remove the cooked corn dogs from the oil. Allow them to drain on paper towels. Repeat the process, coating and frying a few at a time, until all of the corn dogs are cooked.
